Ordering a Whole Cow

We try to finish our Jersey Steers out at about 950 pounds.  This gives an average carcass (or hanging weight) of approximately 550 lbs.  This “hanging weight” is the weight you will charged on a per pound basis for and includes only the meat, fat, bones, and connective tissue.

YOUR COSTS:

Meat: At $3.95/lb. x 500 lb. the amount owed to Wallace Homestead would be $1975.
Butcher: At $0.64/lb. x 500 lb. + $80 slaughter fee the amount owed to Hoffman's Meat would be $320
Total Cost: $1975 + 320 = $2,295*   Total Cost Half: $988 + $190 = $1,778*  Total Quarter Cost: $494 + $97 = $591*
Our butcher, Hoffman's Meat, charges $0.64/lb. (whole, $0.65 half,quarter) to process, which includes hanging for 10-14 days, custom butchering, vacuum sealing and freezing.  This would be the price for a standard butchering package. Of course you may customize your butchering however you like and our butcher will be happy to accommodate.
*Certain processing requests are extra.  Please contact Hoffman's Meat  for any specific requests.  Weights can vary by as much as 100 pounds on a whole cow.  Prices & processing costs shown are for example purposes only.  Prices will be locked in upon receipt of your deposit.

Currently we have a half steer already processed and in deep freeze available for purchase.  His steer was grass/hay and MILK fed up until processing so it is well marbled and delicious! It was aged for 14 days.  It is 290 pounds of beef hanging in all the various cuts including many ribeye steaks.  You can get this half-steer immediately.  The cost with processing is $4.75 per pound. ($1377.50 total) Email for details.
